Finally I’m making beautiful and easy loaves!
I used to bake so much bread but then kids plus career plus life….I read about Jeff Hertzberg’s method and thought it was the answer but then my bread came out flat every single time. Enter my Banneton. I realized that I need something to support the very loose dough as it rises.I didn’t want a basket for rising my bread becausea) We have a very small kitchen without storage spaceb) We deal with moths so having something I can’t run through the dishwasher seems like it will end badlyI didn’t realize that I could get a silicon version! This is great because I can throw it in the dishwasher and then smoosh it flat to store.I shopped around different options and chose this one for several reasons. I like that it comes with two shapes. Round and oval. I like the color reminiscent of an actual basket. It looked very “normal” sitting in my kitchen while the bread rose.I wasn’t sure what the quality of the extras would be but was hopeful because I was wanting a dough whisk in a different size than the one I already own and I was hoping for (but not really expecting) a sharp bench scraper (the one I already had is about as sharp as the cover of my planner and can’t be sharpened).Well I’m very happy with the other pieces also.I’ve included a photo… The bench scraper is sharp enough to cut through cardboard. That experiment dulled it a bit but I used my knife sharpener a couple passes and it’s as good as new.The dough whisk is the same quality as the one I already had. Just a note that it’s shorter than the one I had already, which is what I was looking for, but you should double check the measurement if that matters to you.The lame is just a lame. Same as every other one out there. It works just like all the others. It comes with a sturdy sleeve so you can safely store the lame with the blade on it if you want to. It comes with extra blades. I already had a lame from many years ago when I baked bread regularly and still have most of the blades from that so I would expect that you’ve got enough here to last you a very long time unless you’re using it constantly.The silicon brush is perfect for brushing butter on the crust. I didn’t this time because that wasn’t my goal but that’s how I’ve done the butter-brushing for at least a decade and I highly recommend using a silicon brush rather than another.I will update the review if I have problems with the set but I’m expecting it to last through many years of regular use.

Great for bread making
I have a silicone baking sheet for baking cookies that I like to use, but no actual baking vessels so I figured I’d give these a try for baking my sourdough bread. There are a few things I really like about them:- They are quite sturdy.- They have a nice pattern that echoes in the bread crust.- Two different size bowls, round and oval.- They lay less than 2” when flattened.- Included is a dough scorer (with extra blades), silicone brush, dough whisk and a scraper/divider – all of which are helpful in bread making.- They are very easy to clean.- The cooked bread loaves turn out of the pans easily.Big plus – I have found that because they are silicone, they require much less of an oil coating than the traditional glass or “nonstick” metal pans. I use just a very thin layer and my bread does not stick at all – saving both money and calories. It’s a great product and I would recommend them for those who enjoy baking their own bread.
