Bronze Die, Slow Dried Pasta
Rao’s pasta is authentic Italian pasta extruded through bronze dies. This produces a rough outer surface that better captures the sauce. Rao’s pasta is almost blonde in color indicating that it’s slow dried. Slow drying allows the gluten in the dough to remain almost completely unchanged making it easier for our bodies to break down and absorb. Less expensive pasta appears slightly orange as it’s subjected to heat during the drying process.

This is a brand my favorite chef/ author likes. So I purchased 2, and wow the price is right, the quality of this pasta is evident when you cook it and taste it. Not slimy not mushy not bland. It is substantial feeling and tasting. I will buy more.
