The ancient Morelli Pasta Factory was founded in 1860 and is a fifth-generation family business. We produce a vast range of specialties, using ancient craft techniques, free of both preservatives and coloring agents. The result is truly wholesome pasta, with a wonderfully rich flavor and full consistency.
What makes our products unique?
We reincorporate the wheat germ into the semolina of some of our pasta to give it a unique taste and a wonderful aroma.
What problem are we solving?
We specialize in classical regional pasta as well as more innovative flavored pasta. All of our raw ingredients are selected with care and use either Tuscan or Italian wheat to ensure the highest quality.
How do we create our pasta?
We use artisanal processes in which mixing is done slowly. The bronze dies used to cut the pasta give it a perfect consistency and the drying is done slow and low, for at least 36 hours.

Where’s the squid ink flavor?
I have had authentic squid ink pasta in Italian restaurants. I was trying to replicate an dish I had in Italy. This pasta is the right color but had absolutely no squid flavor. Don’t bother spending the extra money. Just get your standard pasta and you’ll be golden.
