The ancient Morelli Pasta Factory was founded in 1860 and is a fifth-generation family business. We produce a vast range of specialties, using ancient craft techniques, free of both preservatives and coloring agents. The result is truly wholesome pasta, with a wonderfully rich flavor and full consistency.
What makes our products unique?
We reincorporate the wheat germ into the semolina of some of our pasta to give it a unique taste and a wonderful aroma.
What problem are we solving?
We specialize in classical regional pasta as well as more innovative flavored pasta. All of our raw ingredients are selected with care and use either Tuscan or Italian wheat to ensure the highest quality.
How do we create our pasta?
We use artisanal processes in which mixing is done slowly. The bronze dies used to cut the pasta give it a perfect consistency and the drying is done slow and low, for at least 36 hours.

Almost what we had in Italy
I say “almost” as we are still working to get the sauce right. This has the subtle flavor of the squid ink and is not overpowering. I do think the pasta we carried back from Florence had more flavor, but was actually more expensive as well.We preferred it over the “Best Seller” Camp’Oro that we previously tried although it is more expensive.

Good shelf life
Morelli Squid Ink Linguine has a good dark color. The package shelf life is very good so I don’t have to hurry to use it up. I think it is the best served with scallops or shrimp in a lemon and butter sauce.

This is the real deal, a bit pricey but worth every penny in the end!!
I am a Private Chef (classically trained since 2004) and Caterer and found this item to be very top notch. It holds up extremely well, and has been a great selling point for me. The flavor is subtle and not overpowering and my clients have consistently given great feedback and high praise. Here is my lobster and jumbo lump crab version of this squid ink pasta sautéed in a sofrito mixture and finished with black truffle butter, garnish of fresh baby basil leaves. It was just outstanding. I will continue to order this as it is truly gourmet item that will make any seafood lover give you the âoohs and ahhhâsâ upon presentation and most importantly- taste! Great product, highly recommend!!
