How to operate it:

I didnât like the noodle cutter, the engine gets very hot, although they advertise it for commercial purposes, I donât advise you to buy it for business

It takes time to figure the use of all the parts.
There was no instructions or book came with the machine, we took awhile for us toFigure the use of everything. After going through 2 batches of dough it was easy to use.

Great Machine for Ramen and Gyoza Dough
Iâve had this machine for a few weeks now and I love it so far. Itâs very sturdy, and fairly intuitive to use. The directions arenât in English but I figured it out pretty easily. It takes a bit of adjusting the knobs to get the cutter in and out, and to make sure itâs tight enough to really cut the noodles. But once you figure it out itâs very simple. My only âconâ so far is that I wish there were some kind of indicators on the roller knobs to show how thinly youâre rolling the dough. It seems to work to eyeball it but I would like more precision.Overall, this felt like a risky purchase and I LOVE it. So glad not to be hand rolling my ramen anymore, and this will be a great next step toward opening my own ramen shop.Now Iâve just gotta figure out how to get different sizes of cutter attachments.

Would buy again
We bought this machine for our Ramen truck. It has been a good little machine for noodle making. The instructions do not come in English, but it was fairly easy to put together. After about a month of using the red knobs did break off, but you can still use it with some tools. Weâve now had it for almost a year and it is still working good, not like when it was new but it does get the job done.
