Watch Your SODIUM
Please be careful. Sodium is the silent killer. One packet of flavoring is two servings. Other than that, the bite, texture and flavor of this brand of wheat-fee ramen is spectacular. I buy mushroom or miso flavor and add nori, beyond meat, green onion, a fried egg over easy with a side of kimichi. Delicious.

These ramen were very easy to prepare and were a great value & quality as a gluten free product. I love the noodles and you can add anything you wish like chicken or other veggies when the noodles are boiling.

Tasty, easy lunchâbe careful when making it
I’m on a really tight budget, so ramen is one of my go-to cheap lunches. I like this ramen bowl and feel good about eating it because of the healthy and responsibly sourced ingredients. Buckwheat has a lot of health benefits, so I appreciate having this choice over straight rice noodles. The broth is plenty flavorful on it’s own, but I do often add a smidge of salt, or sometimes a seasoning mix that’s a blend of salt and freeze-dried shallots, chives, garlic, and green peppercorns which makes it super-savory for almost no extra cost. I also often save a small piece of chicken breast from dinner and dice it up to toss in, so that adds a bit more flavor, too. One note of caution about preparing the soup, thoughâyou’ll want to remove the pot from the heat for a moment before adding the soup mix because, if you dump it into rapidly boiling water, it will literally explode and you’ll end up with a mushroom powder-coated stove top and very little in the soup. I learned this the hard way the first time I made it, forgot the second time I made it, and it was only on my third time that I got to taste the soup with 100% of the soup mix in it. Also, note that buckwheat noodles tend to go from too al dente to mush in a real short period of time. That’s not the fault of this company’s product, that’s just the nature of buckwheat noodles, so be sure not to under or overcook them; the directions say 4:00 minutes and that’s just right.

We purchased the Buckwheat Mushroom. They are tasty, vegan, gluten-free, and non-gmo. Buckwheat is an ancient grain and we love ancient grains. The only thing we didn’t care too much for is the sauce packet. We tried it and although it is good, we try to stay away from soy as much as possible. We substituted with our own herbs & spices and also used Coconut Aminos.I see people stating that these aren’t tasty or taste “funny”, but I think people are expecting the taste of traditional ramen. Traditional ramen (white ramen noodles) are loaded with gmo’s and additives. They also have no nutritional value. You will never hear anyone say it’s good for you. This is definitely a healthy alternative if you are looking for convenience.

Good flavor and a good alternative for a diabetic diet – skip the flavor packet and cook the noodles in chicken or veg stock ….
