The ancient Morelli Pasta Factory was founded in 1860 and is a fifth-generation family business. We produce a vast range of specialties, using ancient craft techniques, free of both preservatives and coloring agents. The result is truly wholesome pasta, with a wonderfully rich flavor and full consistency.
What makes our products unique?
We reincorporate the wheat germ into the semolina of some of our pasta to give it a unique taste and a wonderful aroma.
What problem are we solving?
We specialize in classical regional pasta as well as more innovative flavored pasta. All of our raw ingredients are selected with care and use either Tuscan or Italian wheat to ensure the highest quality.
How do we create our pasta?
We use artisanal processes in which mixing is done slowly. The bronze dies used to cut the pasta give it a perfect consistency and the drying is done slow and low, for at least 36 hours.

Great pasta!
I used this to test my first attempt at authentic bolognese – absolutely love this pasta. Iâm not ready to make my own pasta yet. So this is PERFECT pappardelle!

I found this pappardelle with wheat germ to be delicious. The wheat germ prompted me to try it for health reasons, think that it would taste better than whole wheat pasta with the bran. I didn’t notice the taste of the wheat germ and did notice how much I liked this. Twice, I’ve cooked it al dente or slightly more, then let it plump in sauce, in a covered pan. Much better than major brands I’ve tried. Thanks.

They taste great, the texture is enjoyable. My wife is gluten intolerant and can eat these in moderation without adverse effects. (Use your own judgement). We have purchased these multiple times.

Delicious health food – and real pasta
The added wheat germ gives it color, flavor, protein, and fiber. They use durum wheat. This is the good wheat. To me, this is the kinda pasta you get when you go into one of a million SLOW FOOD restaurants and order real healthy pasta such as the SLOW FOOD movement would insist on.

I love that this is made without bleached, bromated, or enriched flour. Two of my kids are gluten sensitive and they can eat this without any problems. Love it!!
