Wish this stuff was at my local store
Got this pasta after making a new year’s resolution to try a new pasta every month. Was fascinated by this one based off its bulky and unique shape, and its story having been a pasta invented within the past few decades. Figured I’d buy it from the source to see if it was worth the fuss. The individual pieces are much bigger once cooked than I initially anticipated, and they hold a really nice texture and bite even a day later after sitting in the fridge. Highly recommend throwing this into a marinara or pureed sauce, as sauces cling super nicely into all of the crevices. The flavor profile is pleasantly light. I did have to boil it for around 4 minutes longer than recommended to cook all the way through, but the thinner outside ridges held up well during the extra time. I imagine this is a fairly forgiving pasta if you accidentally overcooked it.Would definitely recommend giving this a try! Seems pretty versatile, and is a simple way to shake up your pasta routine!

Lives up to the hype
I first bought some cascatelli when it was first released because I bought into the hype, now I always keep some on hand. They absolutely have the best, most interesting texture of any dry pasta that I’ve had, and it’s not close. The shape works as designed and hangs on to many different sauces well. Give it a try! My only complaint is that when I ordered a small quantity from Amazon rather than a case of 4 boxes straight from the vendor, the pieces were much more damaged, but not to the point that it was offensive.

Sfoglini is now my favorite pasta
The shapes vary, but the pasta they are made out of is pretty much the same. Delicious. I’ve stopped buying any other brand.

Good idea, not well executed
The flavor seemed to be better than normal pasta. And the intricate shape does allow more “sauce” to stick to the pasta – which is a good thing. However, the pieces of pasta were, too thick for my liking. The pasta was therefore too chewy – which detracted from the mouth feel and partly reduced the benefit of having a better sauce to pasta ratio. Add that to the rather high price, and, for me, it just isn’t worth it!

Fun new pasta shape!
My daughter-in-law saw something about how this pasta was created. It took a long time and the inventor spent a lot of time and energy developing this new shape. He had very specific goal for this pasta. Flavor, texture, the ability to hold sauce, etc. It is very tasty and we just ordered our second batch. I ordered extra to share.

Scientifically perfect shape
The shape of the pasta was scientifically engineered to hold the most sauce per pasta piece and it completely lives up to the hype. Great taste, easy to cook. Perfecto

Very thick pasta. More for baked pasta dishes.
It took forever to boil. Really great pasta takes a few minutes. Not for use with fresh sauces. Just way too dense. The shape is great for catching sauces. But, I would suggest using only in baked pasta dishes. I would not buy again.

My new favorite pasta
Listen to the spoonfull multipart podcast to get the entire story but this is not a gimmick for a podcast – our new favorite pasta in this size.

Package came open. Spilled out into the Amazon packaging. Not sure how it tastes. Probably like pasta.
